CLASSIC CHOCOLATE CUPCAKE

ASSALAMUALAIKUM...

Dah lama K.Nor simpan resipi cupcake ni, yg diambil dr dapur org Seberang Tambak nun. Kebetulan duk pikir2 nak buat apa utk anak dara bawak balik ke asrama Sabtu baru2 ni, teringat nak godek cupcake ni. Nak ngetes org kata pun ya jugak :)


Alhamdulillah.. mmg berbaloi2.. Sedap! Tak makan dgn frosting/icing pun tak per. Ada sedikit penderhakaan yg dah K.Nor buat, menambah sedikit baking powder dan juga memasukkan cuka pd susu yg digunakan utk menghasilkan buttermilk. Alang2 nampak ada penggunaan susu fresh, jd terfikir nak letak cuka supaya menjadi buttermilk. Seperti yg sedia maklum (kebiasaan bakers mmg tau) kalau adanya penggunaan buttermilk dlm adunan tak kira la cake, pancake, insyaallah apa yg kita hasilkan tu akan menjadi lebih moist dan lebih sedap. Satu adunan menghasilkan cupcake yg agak lumayan gak la. K.Nor buat dlm papercup saiz L dan dpt lebih kurang 26 - 28 bj cupcakes. 



K.Nor tak ikut sepenuhnya resipi yg K.Nor ambil kat dapur Ayu ni yg menggunakan Chocolate Frosting, sebaliknya K.Nor guna lebihan buttercream yg kebetulan masih berbaki dlm peti ais. Dari duk bertapa lama2 dlm peti ais, baik kita guna, kan.. Lain kali boleh cuba resipi frosting asal tu pulak.. Tq Ayu for sharing the recipe ya.. Memang boleh dibuat lagi dan lagi nih.. Insyaallah... 

Pertama kali menerai bakar cupcake dlm magic pan.. Alhamdulillah.. menjadi walaupun tak naik membumbung sgt..
Bakar dgn api 'besar sket dr kecil' selama 20 - 25 min sambil alih2kan pan supaya kepanasan rata.

CLASSIC CHOCOLATE CUPCAKE

Ingredients:-
170g butter-(3/4 cup)
2 cups sugar (-I used 11/4 cup) ~ sama dgn Ayu
3 eggs
2 cups plain flour
1 tsp baking soda + 1 sk baking powder ( k.nor tambah)
1/2 tsp salt
85g cocoa powder-(Ayu used Valrhona cocoa powder)
11/2 cups milk + 2 sb cuka --> buttermilk (k.nor tambah, utk menghasilkan buttermilk)
2 tsp vanilla

Method:-
Cream butter until softened. Add sugar and beat until light and fluffy. Add eggs, one at a time. Measure the flour, baking soda, salt and cocoa powder into a medium sized bowl and whisk to combine. Add about a third of the dry ingredients to the butter/sugar and beat to combine. Add about half of the milk and beat to combine. Continue adding, alternating between dry and wet and finishing with the dry. Mix in vanilla. Scoop batter into cupcake cups 1/2 or 60% full. Bake at 170C for about 25-30 minutes or until a cake tester comes out clean.

K.Nor letak 75 - 80% full (baked 18 - 20mins)

Frosting:-
142g chocolate (5 oz)-(Ayu used Valrhona Dark Chocolate)
86g butter(3 oz)
1/2 cup sour cream
1 tsp vanilla
5-7 oz icing sugar (start with 5 oz and add accordingly) - (Ayu used 2 oz - 21/2 oz-60g -75g)

Method:-
Melt butter and chocolate using a double boiler. Once smooth and melted, gently whisk in vanilla. Whisk in icing sugar, a little at a time. Add in sour cream and cream till its satiny smooth. Keep it aside for a while to thickens. Do give it a stir once in a while.
